This is just so deliciously easy and don't forget cheap! YUM!
For each serving;
100gm Gluten Free Baking Mix
1 egg
1-2 tsp Extra Virgin Olive Oil
Pinch of Salt
little bit of water if too dry/little bit of flour if too wet
1. Put flour in pile on your workbench (I use a cookie tray to counteract the MESS!), make a well in the baking mix/flour.
2. Put egg, oil, and salt into the well.
3. Gradually bring the flour over the wet ingredients mixing it all up with your hand. It should begin looking like breadcrumbs - keep on going - it will then begin to take on the shape of dough. If it's too wet, add flour, or if its too dry a little bit of water.
4. Knead the dough until it looks smooth and a little "elastic". Leave to rest for 30 minutes or so - you can make the sauce while you wait! :)
5. I made mine using my new pasta machine, but you can roll it by hand if you want. Pat your portion into a flat disc shape. At the widest setting, roll the pasta through, and then fold into fourths and do again around 3 times. Then moving to a smaller setting every time roll the pasta through until it is as thin as you want it. I then used the tagliatelle rollers to make yummy tagliatelle.
Gluten Free pasta does crumble a little bit, so it won't "look" perfect - but it tastes SUPERB!

Dairy Free Lasagne
Yes, I have altered my favourite lasagne dish to be dairy-free! It was extra delicious - surprise, surprise!!! Instead of making a white sauce with cows milk, I used Coconut Cream and added a teaspoon of Turmeric to make it a little cheesy looking. Gotta work on those visuals to make food at least a little appetising.
So here it is, off the top of my head, cos' thats how I make lasagne.
For 5-6 servings:
Meat Sauce
1 tbsp olive oil
1 large chopped onion
2 cloves garlic, minced
500gm minced beef
1 can tomato pasta sauce
1 can chopped whole peeled tomatoes
2-3 tsp mixed dried herbs
* Brown onions and garlic together, then add mince and cook for 10-15 minutes, stirring so meat doesn't stick to pot. Add the rest of ingredients and cook another 15 minutes or so.
White Sauce
1 can Coconut Cream
1 can water with 2 tbsp cornflour added
1 tsp turmeric
* Heat all the ingredients together in a pot for about 15-20 minutes, until thickened, stirring every now and then.
Lasagne Pasta
At least 1 bag of dried gluten free Lasagne
* Cook the pasta in a large stock pot filled with water, a tsp of salt and a tbsp of olive oil.
When all the above ingredients are cooked, place in layers into a oven dish and cook for 20-30 minutes in a moderate oven.

the recipe box swap; Spag Bol
Spaghetti Bolognaise
2 tbsp oil
2 cloves garlic, crushed
1 onion, chopped
500gm minced beef
1 x 400gm can's of chopped tomatoes
2 tbsp mixed herbs - optional
1/2 glass of wine - optional
2 tbsp oil
2 cloves garlic, crushed
1 onion, chopped
500gm minced beef
1 x 400gm can's of chopped tomatoes
2 tbsp mixed herbs - optional
1/2 glass of wine - optional
Brown the garlic and onion in the oil. Then add the mince and the other ingredients and boil until nice and thick.
Serve with fresh pasta and yummy cheese on top!
